have a barn find 1961? Redfish Oceanic with a 800 shark motor & original trailer...
any ideas as to a value ?

Assuming that the upholstery and interior looks good, the engine runs and it's a turn-key-ready-to-launch boat, I'd peg the value at right around $2,000...$2,500 max...At least that's about what I'd be willing to pay.

I would think of this as a project boat,
ie: needs interior (cushions)
un-kown if motor runs - looks all there
deck feels a little spongie may need to be replaced...

I would say you have a sort of rare boat with a kind of hard to find outboard. That being said almost no one knews or appreciates those qualities, based on a percentage of the human population. I would say start at $1,250 and expect something around $500 or less. It has a lot going for it when it comes to a good restoration candidate, but it looks like it needs a complete restoration. If it where closer to me I would love the opportunity to have it, restore it, and enjoy such a unique looking watercraft. Hope that helps, of course this is all just my personal opinion, and some crazy person might offer you $10,000 on the spot, but you might have to wait a couple century's for that.
